Buff Sukuti is a traditional dried meat delicacy from Nepal, enjoyed across the Himalayas. Once a vital winter protein source, it is now a beloved treat known for its rich flavor and versatility.
To produce sukuti, buffalo meat is cut into thin strips with fat carefully removed. The strips are hung above a Chulho (wood fire smoke) to remove moisture and develop a distinct smoky flavor. The meat is coated with spices such as salt, cumin, pepper, chilli powder, turmeric, ginger, and garlic paste, then sun-dried until all moisture is removed.
Buff Sukuti has a rich, savory, and mildly smoky taste profile, made from premium buffalo meat with key ingredients like salt, cumin, and coriander.
